Training often stays theoretical. But wine service is live, fluid, and full of nuance. If your team never practices in context, they won’t perform with confidence.


🧪 Solution: Use Task-Based Learning to Simulate Real Wine Interactions

In Second Language Acquisition, Task-Based Learning (TBL) means structuring lessons around real-life communication tasks. The idea is simple:

Give the learner a goal that mirrors real use, and let them practice until it’s natural.

For restaurants, that means skipping flashcards and diving into service simulations.


🍷 3 Task-Based Drills to Train Wine Service Like a Pro

  1. Guest Scenario Roleplay

    • Set up scenes like:
      “A guest wants a bold red under $60 to pair with steak.”
    • Have staff recommend 1–2 wines with reasoning.
    • Rotate scenarios daily or weekly. Add price points, allergies, or vague guest descriptions to increase challenge.
  2. “Silent Server” Drill

    • One server describes a wine.
    • Another writes it down from memory—without clarification.
    • Check if the core details (style, varietal, body, etc.) were retained.
    • This tests clarity and accuracy in speaking.
  3. Upsell Mission

    • Assign a bottle each shift.
    • Task staff with suggesting it naturally at least once.
    • Follow up: “Did you use texture or mood in your pitch?”

These aren’t just games—they turn passive memory into active sales skill.
